This quick and comforting 10-minute Korean Egg Rice (Gyeran Bap) is a classic one-bowl dish featuring buttery, fluffy rice topped with a sunny-side up egg, savory soy sauce, toasted sesame oil, and fresh green onions. Perfect for breakfast or a simple meal any time of day, it’s infinitely customizable with your favorite toppings like kimchi or roasted seaweed.

Ingredients

Main Ingredients

  • 1 ½ cups cooked short grain rice (or substitute with jasmine rice)
  • 1 egg
  • 1 tablespoon unsalted butter
  • ½ teaspoon toasted sesame oil
  • 1 tablespoon regular soy sauce (add to taste)
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon green onion, finely sliced
  • ½ teaspoon vegetable oil (or any neutral oil)

Optional Additions

  • Kimchi
  • Canned tuna
  • Roasted seaweed flakes
  • Avocado
  • Sautéed carrots, spinach, or zucchini
  • Additional protein of choice

Instructions

  1. Prepare the Rice: In a large bowl, mix the hot cooked rice with unsalted butter until fully combined and glossy. If using leftover rice, microwave it for 2-3 minutes until hot. (See Notes for how to cook fresh rice if needed.)
  2. Fry the Egg: Heat a non-stick pan over medium heat and add the vegetable oil. Crack in the egg and cook sunny side up, frying until the whites are nearly set but the yolk remains runny. To help the yolk cook faster, carefully spoon some hot oil over the yolk. For a crispy-edged egg, use more oil; for a softer egg, lightly grease the pan. For scrambled eggs, beat them before cooking low and slow, stirring as you go.
  3. Assemble the Bowl: Place the fried egg on top of the buttered rice.
  4. Garnish and Serve: Drizzle with soy sauce and sesame oil, then sprinkle on the toasted sesame seeds and sliced green onions. Add any other desired toppings such as kimchi or roasted seaweed. Mix everything together just before eating. Enjoy!

Notes

  • If you don’t have cooked rice ready, prepare ⅔ cup (uncooked) short grain or jasmine rice according to package instructions.
  • This recipe is easily doubled or tripled for additional servings; adjust ingredients proportionally.
  • Use freshly cooked, steaming-hot rice for the best texture and flavor.
  • Customize with your favorite add-ins like kimchi, canned tuna, or grilled protein for a heartier meal.
  • To make this dish vegan, use plant-based butter and replace the egg with a tofu scramble.
