Deliciously simple and naturally sweetened 4-Ingredient Banana Waffles that are moist, fluffy, and packed with wholesome flavors. Perfect for a quick breakfast or brunch, these waffles use ripe bananas, coconut flour, coconut milk, and eggs for a gluten-free and nutrient-dense meal that the whole family will love.

Ingredients

Waffle Batter

  • 4 ripe bananas, mashed (about 1.25 to 1.5 cups mashed)
  • 1/3 cup full-fat canned coconut milk
  • 3 large eggs
  • 1/2 cup coconut flour
  • 1 to 2 tablespoons honey
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Mix wet ingredients. In a mixing bowl, mash the ripe bananas thoroughly until smooth. Add the eggs and coconut milk, then whisk well until all the wet ingredients are fully combined and smooth.
  2. Add dry ingredients and mix. Gradually add the coconut flour, ground cinnamon, vanilla extract, honey, and sea salt to the wet mixture. Stir well until a thick batter forms. The consistency should be thick but spoonable. Allow the batter to rest for at least 15 minutes to let the coconut flour absorb moisture. You may refrigerate the batter for up to 1 day if preparing ahead.
  3. Heat and prepare waffle iron. Warm up your waffle iron and lightly spray or grease it with cooking oil or non-stick spray to prevent sticking.
  4. Cook waffles. Spoon or pour the thick batter onto the hot waffle iron, spreading evenly. Optionally, sprinkle chocolate chips on top of the batter before closing the lid. Cook the waffles until they are golden-brown, crispy on the outside, and cooked through, typically about 4-6 minutes depending on your waffle iron.
  5. Serve and enjoy. Carefully remove waffles from the iron and serve immediately with your favorite toppings such as fresh fruit, syrup, nut butter, or yogurt.

Notes

  • Using ripe bananas is key for natural sweetness and moisture.
  • Allowing the batter to rest helps hydrate the coconut flour for better texture.
  • You can prepare the batter the night before and refrigerate for convenience.
  • Adjust honey amount based on your preferred sweetness level.
  • For dairy-free option, coconut milk is used instead of dairy milk.
  • Adding spices like cinnamon enhances flavor but is optional.
  • Be sure to preheat the waffle iron for even cooking and crispy edges.
