Ambrosia Eton Mess is a delightful and refreshing dessert featuring layers of whipped cream, marshmallows, Greek yoghurt, juicy boysenberries, crunchy meringues, fresh strawberries, and crumbly Flake chocolate bars. This no-bake treat combines creamy, fruity, and crunchy textures, perfect for serving chilled on warm days or as a light yet indulgent dessert for gatherings.

Ingredients

Dairy & Cream

  • 300ml cream
  • 500g Greek yoghurt

Fruits & Berries

  • 1 can boysenberries, drained (425g)
  • 2 punnets of strawberries, finely sliced

Sweeteners & Sweets

  • 180g bag marshmallows
  • 12 pack of meringues (95g)
  • 3 Flake bars

Instructions

  1. Whip the cream: In a large bowl, whip the cream until soft peaks form to create a light and fluffy base for the dessert.
  2. Add marshmallows: Cut the marshmallows in half and gently fold them into the whipped cream to add a sweet and chewy texture.
  3. Mix yoghurt and berries: Add the Greek yoghurt, drained boysenberries, and one crumbled Flake bar to the cream mixture. Stir carefully until all ingredients are well combined to create a creamy, fruity blend.
  4. Prepare meringues: Cut the meringues into pieces to provide crunchy layers in the dessert.
  5. Layer the dessert: In stemless wine glasses, layer the ambrosia mixture, meringue pieces, and sliced strawberries with another crumbled Flake bar until the glass is nearly full. Repeat this process in all glasses until all ingredients are used up.
  6. Top and chill: Crumble the remaining Flake bar over the top of each dessert. Chill the assembled desserts for at least 3 hours or preferably overnight to allow flavors to meld and the dessert to set.

Notes

  • For best flavor, use fresh, ripe strawberries and high-quality Greek yoghurt.
  • Chilling the dessert overnight enhances the melding of flavors and softens the meringues slightly for a perfect texture.
  • Can be prepared in advance and stored covered in the refrigerator.
  • If boysenberries are not available, frozen or fresh mixed berries can be substituted.
  • This dessert is best served cold and enjoyed within 24 hours of preparation for optimal texture.
