Ingredients

  • 3 cups Rice Chex cereal
  • 3 cups Corn Chex cereal
  • 3 cups Wheat Chex cereal
  • 1½ cups pecan halves
  • 1½ cups apple chips
  • 1 teaspoon cinnamon

  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

  • ¼ cup butter
  • ½ cup brown sugar
  • ⅓ cup light corn syrup

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 250°F (120°C). Line a large baking sheet with a silicone mat or parchment paper to prevent sticking.
  2. Combine Cereals and Pecans: Place 3 cups each of Rice Chex, Corn Chex, and Wheat Chex along with 1½ cups pecan halves on the prepared baking sheet, mixing them gently to distribute evenly.
  3. Make the Coating Sauce: In a medium saucepan over medium heat, combine ¼ cup butter, ½ cup brown sugar, and ⅓ cup corn syrup. Stir frequently and cook until the butter is fully melted and the sugar has dissolved into a smooth sauce.
  4. Add Spices and Leavening: Stir in 1 teaspoon cinnamon, ¼ teaspoon ground ginger, ½ teaspoon baking soda, and ½ teaspoon kosher salt into the saucepan. The mixture will foam slightly as the baking soda reacts—this is normal.
  5. Coat the Mix: Pour the warm butter and sugar mixture evenly over the cereal and pecans on the baking sheet. Use a spatula or your hands to toss everything thoroughly, ensuring all pieces are well coated.
  6. Bake the Mixture: Place the baking sheet in the oven and bake for 60 minutes total. Every 20 minutes, remove the tray and stir the mixture gently to ensure even baking and coating.
  7. Cool and Add Apple Chips: After baking, remove the Chex mix from the oven and let cool for 5 minutes on the baking sheet. Then, transfer the mix onto wax paper and break apart any large clumps with your hands.
  8. Incorporate Apple Chips and Store: Stir in 1½ cups apple chips into the cooled mix. Allow the entire mixture to cool completely before storing in an airtight container to maintain freshness and crunch.
