Cozy, comforting, and deliciously sweet, this Apple Rice Pudding is a delightful no-bake dessert made on the stovetop. Featuring creamy pudding rice cooked with plant milk and fragrant cardamom, and topped with softly sautéed apple slices and a drizzle of maple syrup, it’s perfect for a warm, satisfying treat.

Ingredients

Rice Pudding

  • ½ cup pudding rice or arborio rice
  • 1.5 cups plant milk of choice
  • ½ cup water
  • 1 teaspoon brown sugar
  • 1 teaspoon cardamom or cinnamon*
  • ½ red apple, half sliced, half grated
  • 1 tablespoon maple syrup

Topping

  • 1 tablespoon coconut oil, melted

Instructions

  1. Prepare the Rice Pudding: Add pudding rice, plant milk, water, and cardamom to a large pot. Bring to a boil over medium-high heat while stirring continuously to prevent sticking. Once boiling, reduce the heat to a very low simmer and cook for about 25 minutes, stirring often until the rice softens and achieves a creamy consistency. Adjust with more milk or water if needed.
  2. Add Grated Apple: Approximately 5 minutes before the rice pudding is done, stir in half of the grated apple to incorporate fresh apple flavor and texture into the pudding.
  3. Cook Apple Slices: While the pudding finishes cooking, heat melted coconut oil in a small skillet over medium heat. Using tongs, place the apple slices in the skillet and sprinkle with a little cardamom. Cook the slices until they soften and are slightly caramelized, about 4-5 minutes.
  4. Serve: Spoon the warm rice pudding into bowls. Top with the cooked apple slices and drizzle with maple syrup. Serve immediately and enjoy the comforting combination of flavors.

Notes

  • Cinnamon scores 0 on the SIGHI histamine list but is debated, as it appears higher on some other lists. Only use if you tolerate it well.
  • Use pudding rice, arborio rice, or a short grain rice that is suitable for rice pudding to achieve the best creamy texture.
  • Stir frequently during cooking to prevent the rice from sticking to the pot and burning.
