Instructions

  1. Prepare Marinade: In a large bowl, combine 1/4 cup low sodium soy sauce, 2 tablespoons seasoned rice vinegar, 2 tablespoons coconut or brown sugar, 1 tablespoon oil (half of the total), 1 teaspoon sesame oil, 1 tablespoon grated fresh ginger, and 3 cloves minced garlic. Stir well to blend all flavors thoroughly.
  2. Marinate Shrimp: Add 1 pound peeled and deveined shrimp to the marinade. Mix to coat all shrimp evenly. Let the shrimp marinate for 30 minutes at room temperature or cover and refrigerate for up to 1 hour to enhance flavor.
  3. Heat Pan and Cook Shrimp: Place a large wok or sauté pan over medium-high heat. Add the remaining tablespoon of oil. Using a slotted spoon, transfer shrimp from marinade to the pan, discarding excess marinade in the bowl. Sauté shrimp for 4-5 minutes, stirring once, until the shrimp turn pink and opaque, indicating they are fully cooked.
  4. Remove Shrimp: Remove the cooked shrimp from the pan and place them in a separate bowl to keep warm.
