This vibrant and fresh Avocado Salsa combines creamy avocado with juicy tomatoes, sweet corn, and zesty lime juice for a deliciously healthy and refreshing condiment or dip. Ready in just 15 minutes, it’s perfect for serving with tortilla chips or as a flavorful topping for grilled meats and tacos.

Ingredients

Avocado Salsa Ingredients

  • Juice of 1 lime (2-3 tablespoons)
  • 3 garlic cloves, minced (about 1 tablespoon)
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • ½ teaspoon ground cumin
  • 2-3 medium avocados, peeled, pitted, and diced (about 3 cups)
  • 3-4 roma tomatoes or 2 cups (10 ounces) cherry tomatoes, diced
  • ⅔ cup corn (fresh, canned, or frozen and thawed)
  • ½ small red onion, diced (about ½ cup)
  • 1 small jalapeño, finely chopped (1-2 tablespoons)
  • ½ cup chopped fresh cilantro

Instructions

  1. Prepare the Lime Mixture: In a small bowl, whisk together the lime juice, minced garlic, salt, black pepper, and ground cumin until well combined. Set this mixture aside to let the flavors meld.
  2. Combine Vegetables: In a medium bowl, add the diced avocado, diced tomatoes, corn, chopped red onion, finely chopped jalapeño, and half a cup of chopped fresh cilantro. These fresh ingredients form the base of the salsa.
  3. Add Lime Mixture: Pour the prepared lime juice mixture over the salsa ingredients. Gently fold everything together, ensuring the avocado and other vegetables are evenly coated without mashing them.
  4. Adjust Seasoning: Taste the salsa and add more salt or additional lime juice if needed, adjusting to your flavor preference for balance and brightness.
  5. Serve and Enjoy: Serve the avocado salsa fresh with tortilla chips, or use it as a flavorful condiment atop grilled meats, tacos, or any dish that could use a fresh, zesty kick.

Notes

  • Use ripe but firm avocados to avoid overly mushy salsa.
  • If you prefer less heat, reduce or omit the jalapeño.
  • Fresh corn adds the best texture but canned or thawed frozen corn works well in a pinch.
  • Prepare avocado salsa fresh and serve immediately as the avocado can brown if left too long.
  • For a smoother texture, lightly mash the avocado before mixing.
