Ingredients

Glaze

  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey

Main Ingredients

  • ½ teaspoon Diamond Crystal kosher salt (or ¼ teaspoon of any other salt, including Morton kosher salt)
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 8 strips bacon – regular-cut, not thick

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C). Line a rimmed baking sheet with foil and place a roasting rack on top. Lightly grease the rack to prevent sticking.
  2. Prepare the Glaze: In a small bowl, whisk together the Dijon mustard and honey until well combined. Divide the mixture into two equal portions and set aside for later use.
  3. Season the Chicken: Pat the chicken breasts dry thoroughly with paper towels to remove excess moisture. Sprinkle both sides evenly with salt, black pepper, and garlic powder to enhance the flavor.
  4. Wrap with Bacon: Wrap each chicken breast with two strips of regular-cut bacon. Make sure the bacon is snug around the chicken to hold it in place during cooking.
  5. Brush First Glaze & Arrange: Place the bacon-wrapped chicken breasts on the prepared roasting rack. Brush the tops and sides with half of the honey mustard glaze. Clean your basting brush well for reuse.
  6. Bake: Bake in the preheated oven for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the bacon is browned and crispy.
  7. Rest and Final Glaze: Remove the chicken from the oven and loosely cover with foil. Let it rest for about 5 minutes to retain juices. After resting, brush the tops with the remaining honey mustard glaze before serving.
