Ingredients

APPLE PIE FRIES

  • 1 1/4 cups canned Apple Pie Filling (increase to 1 3/4 cups if using US refrigerated pie crust)
  • 3 tbsp sugar (your choice – white, brown, raw)
  • 1/4 tsp cinnamon
  • 2 sheets frozen shortcrust pastry (25cm/10″ square) (do not thaw) OR 14 oz refrigerated pie crust
  • 1 egg
  • 2 tbsp sugar granules (or ordinary sugar) (optional – for sprinkling)
  • Oil spray

SALTED CARAMEL SAUCE

  • 1 cup caster sugar
  • 1/3 cup water
  • 1/2 cup heavy cream (not whipped)
  • 1/4 tsp salt
  • 1 tbsp unsalted butter

Instructions

  1. Prepare the Apple Filling: Place apple pie filling, sugar, and cinnamon in a food processor and blend until smooth for a consistent texture.
  2. Assemble the Pastry Layers: Working quickly to prevent defrosting, lay one sheet of pastry on a flat surface. Spread the apple filling evenly over it, leaving a thin border around the edges. Place the second sheet of pastry on top. Brush the top with beaten egg and optionally sprinkle with sugar granules for added crunch. Freeze the assembled pastry for at least 1 hour to solidify the filling and make cutting easier.
  3. Preheat Oven and Prepare Tray: Preheat your oven to 180°C (350°F) and lightly spray a large baking tray (or two smaller ones) with oil to prevent sticking.
  4. Cut the Pastry Fries: Remove the pastry stack from the freezer and allow it to thaw slightly for 5 to 10 minutes until softened but not defrosted completely. Using a large knife, cut the pastry into fries about 2cm (4/5″) wide and 8cm (3″) long, making approximately 36 fries.
  5. Arrange and Bake: Carefully transfer the fries to the baking tray, spacing them out slightly. Let them come to room temperature while the oven heats. Bake for 15 to 25 minutes until the fries are golden brown and crisp on top.
  6. Make the Salted Caramel Sauce: In a small saucepan over high heat, combine caster sugar and water. Swirl gently to help dissolve sugar without stirring. Bring to a rapid simmer and cook for 3-4 minutes until the mixture turns a light golden brown.
  7. Finish the Caramel Sauce: Remove the pan from heat and slowly pour in the heavy cream (be careful, it will bubble). Whisk to combine, then stir in salt and butter until smooth.
  8. Serve: Let the apple pie fries cool slightly on a rack for 5 minutes, then serve warm with the salted caramel sauce for dipping.
