  • 150g butter
  • 150g brown sugar
  • 1 tsp vanilla essence
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 cup plain flour (150g)
  • 1 tsp baking powder
  • ¾ cup chocolate chips (divided into ½ cup and ¼ cup)
  • 1 tsp icing sugar (for dusting)

Instructions

  1. Preheat and Prepare: Preheat the oven to 170°C fan bake. Line a 17 x 27cm slice tin with baking paper to ensure easy removal and prevent sticking.
  2. Melt Butter and Combine with Sugar: In a large bowl, melt the butter using the microwave in 30-second intervals until fully melted. Add the brown sugar and whisk thoroughly until the mixture is well combined and smooth.
  3. Add Flavor and Bananas: Stir in the vanilla essence, mashed ripe bananas, and eggs. Whisk the mixture until all ingredients are evenly incorporated and the batter is smooth.
  4. Incorporate Dry Ingredients: Sift together the plain flour and baking powder to avoid lumps. Fold these dry ingredients gently into the wet mixture, whisking out any remaining lumps for a smooth batter. Then, stir in ½ cup of the chocolate chips evenly.
  5. Assemble in Tin: Pour the prepared mixture into the lined slice tin and spread evenly. Sprinkle the remaining ¼ cup of chocolate chips on top to add extra chocolate bursts on top.
  6. Bake: Bake in the preheated oven for 20-25 minutes until the slice is firm to the touch and a skewer inserted in the center comes out clean, indicating it is cooked through.
