Made with seasoned ground beef, smoked paprika, garlic, and onion powders, layered with Pepper Jack and Colby Jack cheeses, and topped with crispy bacon and a buttery, everything bagel seasoning crust, these sliders bake to golden perfection on soft Hawaiian rolls with a tangy BBQ sauce finish.

Ingredients

Slider Ingredients

  • 12 ounce Hawaiian Rolls
  • 1 pound ground beef
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 Tablespoon minced garlic
  • 3 Tablespoons BBQ sauce (plus extra for topping)
  • 6 ounces shredded Pepper Jack Cheese (about 1 ¾ cups)
  • 6 ounces shredded Colby Jack Cheese (about 1 ¾ cups)
  • 6 slices bacon (cooked and crumbled)
  • 2 Tablespoons salted butter
  • 1-2 Tablespoons Everything Bagel Seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to get ready for baking the assembled sliders.
  2. Cook Ground Beef: Add the ground beef to a large skillet over medium heat. Cook and crumble the meat until it is no longer pink, then drain excess grease and return the beef to the skillet.
  3. Sauté Garlic: Add the minced garlic to the cooked beef and sauté for about one minute to deepen the flavor.
  4. Season Beef: Stir in salt, black pepper, garlic powder, onion powder, smoked paprika, and 3 tablespoons of BBQ sauce. Mix well, remove from heat, and set aside.
  5. Prepare Rolls: Slice the Hawaiian rolls horizontally and place the bottom half on a baking sheet.
  6. Add Cheese Base: Spread the shredded Pepper Jack cheese evenly over the bottom halves of the rolls.
  7. Add Beef Layer: Spoon the cooked and seasoned ground beef on top of the Pepper Jack cheese layer.
  8. Top with Cheese: Sprinkle the shredded Colby Jack cheese over the ground beef.
  9. Add Bacon: Sprinkle the crumbled bacon evenly over the cheese layer.
  10. Apply BBQ Sauce: Give a healthy squeeze of extra BBQ sauce over all the layers.
  11. Assemble Sliders: Place the top halves of the Hawaiian rolls over the layered fillings.
  12. Melt Butter: Melt the butter in a small bowl in the microwave carefully in short increments to avoid splattering.
  13. Brush Butter: Use a pastry brush to slather the melted butter over the tops and sides of the assembled sliders.
  14. Season Tops: Sprinkle the everything bagel seasoning generously over the buttered tops of the sliders.
  15. Bake: Cover the sliders tightly with aluminum foil and bake in the middle rack of the oven for 10-15 minutes until the cheese is fully melted and the tops are golden brown. Remove from oven and serve hot.

  • Everything bagel seasoning adds a delicious savory crunch on the buttery tops.
  • You can add more BBQ sauce before serving for extra tang and moisture.
  • These sliders can be prepped ahead and baked just before serving for convenience.
