Ingredients

Marinade

  • 2/3 cup ketchup

  • 1/2 teaspoon sweet or smoked paprika

  • 1/4 teaspoon chili powder
  • 1/4 teaspoon black pepper

Instructions

  1. Make the Marinade: In a medium bowl, whisk together ketchup, honey, vinegar, Worcestershire sauce, garlic, paprika, salt, chili powder, and black pepper until well combined to create a flavorful marinade.
  2. Marinate the Chicken: Place the chicken pieces into a gallon-size resealable bag or shallow dish. Pour the marinade over the chicken, toss to coat evenly, then seal the bag or cover the dish. Refrigerate for at least 2 hours and up to 24 hours to let the flavors infuse.
  3. Preheat the Grill: Prepare a pellet grill or regular grill and preheat it to medium to medium-high heat, ensuring it’s ready for grilling the skewers.
  4. Prepare the Vegetables and Pineapple: Cut the pineapple into 1 to 1 1/2-inch pieces. Similarly, chop the bell peppers and red onion into pieces of the same size for even cooking.
  5. Assemble the Skewers: Thread the chicken, pineapple, bell peppers, and red onions onto wooden or metal skewers. A suggested sequence is onion, pepper, pineapple, chicken, repeating until the full skewer is loaded. Fold any excessively long chicken pieces in half before threading for even cooking.
