Ingredients

Meat and Seasonings

  • 1 tablespoon olive oil
  • 16 ounces ground beef
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Vegetables and Aromatics

  • 1 small onion, diced
  • 2 garlic cloves, minced

Soup Base

  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 28 ounces canned petite diced tomatoes

Herbs and Spices

  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon dried oregano

Other Ingredients

  • 9-10 ounces refrigerated cheese tortellini (uncooked)

Instructions

  1. Brown the beef: In a stock pot over medium heat, add olive oil. Once hot, add the ground beef and season with salt and pepper. Spread the beef into an even layer and let it brown undisturbed until you see crisp, brown edges. Flip and brown the other side. Remove beef from pot and set aside.
  2. Sauté the aromatics: Add diced onion to the pot and cook for 4-5 minutes until translucent. Add minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  3. Create the soup base: Stir in tomato paste to coat the onion and garlic. Then add beef broth, canned diced tomatoes, red pepper flakes, dried basil, and dried oregano. Stir to combine all ingredients thoroughly.
  4. Combine and simmer: Return the browned ground beef to the pot along with the uncooked cheese tortellini. Stir well and bring the soup to a simmer. Cover and reduce heat to low. Let simmer until tortellini is cooked al dente, following package cooking time guidance.
  5. Serve: Remove the pot from heat and ladle the soup into bowls. Optionally, garnish with fresh chopped parsley before serving. Enjoy warm.
