These Belgian waffles are buttery, rich, and perfectly golden-crisp, delivering a restaurant-quality breakfast experience. Made with a blend of flour, sugar, cornstarch, and baking powder for a light and fluffy texture, they feature whipped egg whites folded into the batter for extra airiness. Crispy on the outside and tender on the inside, these waffles are ideal for a lazy brunch or a special weekend treat.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup sugar
  • ¼ cup cornstarch (optional, see note)
  • 4 teaspoons baking powder
  • ½ teaspoon sea salt

Wet Ingredients

  • 2 large eggs, separated
  • 2 cups whole milk
  • ⅓ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • Nonstick cooking spray (for waffle iron)

Instructions

  1. Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions and spray it generously with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, cornstarch, baking powder, and sea salt until well combined.
  3. Whip Egg Whites: In a medium bowl, use a whisk or electric mixer to beat the egg whites until stiff peaks form, ensuring they’re fluffy and hold their shape.
  4. Combine Wet Ingredients: In a separate bowl, whisk the egg yolks with whole milk, vegetable oil, and pure vanilla extract until the mixture is smooth and homogenous.
  5. Form Batter: Add the wet yolk mixture to the dry ingredients and stir until fully incorporated. Then, gently fold in the whipped egg whites using a rubber spatula, taking care not to deflate them, until just combined for a light batter.
  6. Cook Waffles: Pour about ½ to 1 cup of batter onto the preheated waffle iron. Close the lid and cook for 5 to 8 minutes, or until the waffle is golden brown and crispy on the edges.
  7. Keep Warm: As waffles finish cooking, transfer them to a baking sheet and hold them warm in a 300°F (150°C) oven until all waffles are ready to serve.

Notes

  • Adding cornstarch to the batter helps achieve extra crispiness on the edges, but you can omit it if unavailable without compromising the overall flavor.
  • Use fresh eggs and beat the whites until stiff peaks to maximize fluffiness.
  • Waffles can be kept warm in a low oven but are best enjoyed fresh for optimal texture.
  • For variation, consider topping with fresh fruit, syrup, whipped cream, or nuts for additional flavor and texture.
