Blueberry Cheesecake Egg Rolls are a delightful dessert featuring egg roll wrappers filled with a creamy mixture of cream cheese, sugar, lemon juice, and fresh blueberries. These egg rolls are air-fried to a crispy golden brown, offering a perfect balance of tart blueberries and rich cheesecake filling inside a crunchy shell. Ingredients

Filling

  • 8 ounces cream cheese, room temperature
  • ½ cup (100 g) granulated sugar
  • 1 teaspoon lemon juice
  • 3 cups (444 g) fresh blueberries

Wrapping

  • 12 egg roll wrappers
  • Water, for wetting the edges of the egg roll wrappers

Topping

  • Confectioners’ sugar, for dusting

Instructions

  1. Prepare the Filling: In a medium mixing bowl, combine the cream cheese, granulated sugar, and lemon juice. Use a hand mixer on medium speed to beat the mixture until it is smooth and creamy. Gently fold in the fresh blueberries ensuring they are evenly distributed without breaking them up too much.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean work surface. Place about 2 to 3 tablespoons of the cream cheese and blueberry mixture toward the bottom corner of the wrapper. Moisten the edges of the wrapper with water to help seal it during rolling.
  3. Roll the Egg Rolls: Fold the bottom corner over the filling, then roll once to begin enclosing the mixture. Fold in the right and left corners toward the center, pressing lightly to seal. Continue rolling up the wrapper until the filling is fully enclosed, pressing the edges firmly to ensure it is sealed. Repeat with remaining wrappers and filling.
  4. Prepare for Cooking: Lightly spray or brush the outside of each rolled egg roll with cooking oil. This will help them crisp up nicely when cooked.
  5. Air Fry the Egg Rolls: Place the egg rolls in a single layer in your air fryer basket, ensuring they do not touch. Air fry at 400°F (200°C) for 4 to 5 minutes, flipping halfway through cooking, until the egg rolls are golden brown and crispy. Cook in batches if necessary depending on the size of your air fryer.
  6. Cool and Serve: Transfer the cooked egg rolls to a plate and allow them to cool slightly. Just before serving, dust them generously with confectioners’ sugar for an elegant finish.

Notes

  • Frying in Oil Instructions: Heat about an inch of oil to 375°F in a large pot. Fry 3 to 4 egg rolls at a time, cooking for 2 to 4 minutes per side until golden brown. Transfer to a paper towel-lined plate to drain excess oil. Dust with confectioners’ sugar before serving.
  • Oven Baking Instructions: Preheat oven to 425°F. Spray a baking sheet with nonstick cooking spray. Place assembled egg rolls on the baking sheet and bake 10 to 12 minutes, flipping halfway through until golden and slightly crispy. Dust with confectioners’ sugar before serving. Note that oven baking yields a chewier texture, less crispy than air frying or frying.
