  • 4 cups fresh blueberries (or frozen blueberries)
  • 1 (15-oz) can full-fat coconut milk
  • ¼ cup pure maple syrup
  • 1/8 tsp sea salt

Instructions

  1. Prepare the mixture: Place blueberries, coconut milk, pure maple syrup, and sea salt into a high-speed blender and blend until the mixture is completely smooth. Some small flecks of blueberry skin may remain, which won’t affect the texture.
  2. Fill the molds: Pour the blended blueberry mixture into popsicle molds, filling each almost to the top.
  3. Insert sticks and cover: Insert a wooden popsicle stick into each mold hole and cover the mold with its lid.
  4. Freeze the popsicles: Freeze the molds for 4 to 8 hours, or until the popsicles are fully set and solid.
  5. Unmold the popsicles: When ready to enjoy, run warm water over the outside of the molds for about 30 seconds or allow them to thaw briefly at room temperature to loosen the popsicles for easy removal.
