Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ⅓ cup granulated white sugar
  • ⅓ cup butter, melted

Filling

  • One 8-ounce package cream cheese, at room temperature
  • One 14.5-ounce can sweetened condensed milk
  • ⅓ cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract

Toppings

  • One 21-ounce can blueberry pie filling
  • One 16-ounce container frozen whipped topping, thawed (such as Cool Whip)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray the bottom of a 9×9-inch pan with nonstick spray to prepare for baking the crust.
  2. Make the Crust: In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture firmly and evenly into the bottom of the prepared pan.
  3. Bake the Crust: Bake the crust in the preheated oven for 8 minutes. Once done, remove from the oven and allow the crust to cool completely while preparing the filling.
  4. Prepare the Filling: In a large bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Gradually add the sweetened condensed milk while continuing to beat until the mixture is smooth.
  5. Add Flavorings: Stir in freshly squeezed lemon juice and vanilla extract, beating the mixture until fully combined and smooth.
  6. Assemble the Squares: Pour the cream cheese filling evenly over the cooled crust. Then gently spoon dollops of blueberry pie filling on top of the cream cheese layer, spreading carefully to keep layers distinct.
  7. Add Whipped Topping: Layer the thawed whipped topping over the blueberry pie filling, spooning it on gradually and gently spreading to avoid mixing the toppings together.
  8. Chill: Refrigerate the assembled dessert for at least a few hours, ideally 3-4 hours or overnight, to allow it to set before cutting into squares and serving.

Notes

  • Ensure the cream cheese is at room temperature before mixing to avoid lumps.
  • Press the crust firmly to ensure it stays intact when cutting the squares.
  • For best results, chill overnight to enhance flavor blending and firmness.
  • You can substitute blueberry pie filling with other fruit fillings like cherry or strawberry for variety.
  • Use a sharp knife dipped in hot water to cut clean squares without disturbing the layers.
