  • 120g butter, melted
  • ½ cup caster sugar (110g)
  • 1 egg
  • 2 tsp vanilla essence
  • 1 cup milk
  • 2 cups self-raising flour (300g)
  • 1 cup frozen blueberries

Topping

  • 1 Tbsp caster sugar
  • ½ tsp cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 190°C (fan bake) to ensure it’s hot and ready for baking the muffins.
  2. Melt Butter: Heat the butter in a large microwave-safe bowl until just melted, being careful not to overheat.
  3. Mix Wet Ingredients: Pour in the sugar and whisk until well combined with the melted butter. Then add the egg, vanilla essence, and milk, whisking again until the mixture is smooth.
  4. Add Dry Ingredients: Sift the self-raising flour into the wet mixture and gently fold together until just combined. Avoid over-mixing to keep muffins light. Stir in the frozen blueberries carefully.
  5. Prepare Muffin Tins: Spoon the batter into greased or lined muffin tins, filling each mold evenly.
  6. Add Topping: Mix together the caster sugar and cinnamon, then sprinkle this mixture over the top of each muffin for a sweet, spiced crust.
  7. Bake: Bake the muffins in the preheated oven for 15 minutes or until they are cooked through and a toothpick inserted comes out clean.
  8. Cool: Allow the muffins to cool in the tin for 5 minutes, then transfer them onto a wire rack to cool completely before serving.
