Bubble and Squeak is a comforting British dish made from mashed potatoes mixed with cooked cabbage and carrots, then grilled or baked with a topping of cheese to create a golden, savory crust. This recipe offers two preparation options, perfect for using fresh or leftover vegetables, delivering a hearty meal ideal for family dinners.

Ingredients

Vegetables

  • 1 kg Potatoes (Peeled and cut into 4cm cubes)
  • 1/2 Savoy cabbage (Thinly sliced)
  • 400 g Carrots (Peeled and sliced)

Other Ingredients

  • 50 g Butter
  • Salt and pepper (to taste)
  • 1 tbsp Sunflower oil
  • 50 g Cheese (grated or sliced)

Instructions

  1. Boil Vegetables: Place a large saucepan of salted water on the stove to boil. Add the potatoes and cook for 10 minutes. Then add the carrots and cabbage and cook together for another 5 minutes until all vegetables are tender.
  2. Preheat Grill: Set your grill to medium heat to prepare for grilling the dish later.
  3. Drain Vegetables: Once the vegetables are cooked, check tenderness by pricking a potato with a knife. Drain them well and return them to the saucepan, removing all excess water by heating on the hob for 1 minute without water.
  4. Mash Vegetables: Mash the potatoes, cabbage, and carrots well together with butter, seasoning with salt and pepper to taste until smooth and combined.
  5. Prepare Dish: Grease a grillproof dish or tin with sunflower oil. Transfer the mashed vegetable mixture into the dish, spreading it evenly.
  6. Add Cheese Topping: Sprinkle the grated or sliced cheese evenly over the top of the mashed vegetables.
  7. Grill: Place the dish under the preheated grill and cook for 3-5 minutes or until the cheese is golden brown and bubbling.
  8. Alternative Using Leftovers: If using leftover cooked vegetables and potatoes, preheat the oven to 200°C (400°F). Mash the cold vegetables and potatoes together with butter, salt, and pepper, then place in an ovenproof dish, sprinkle with cheese, and bake for approximately 30 minutes until heated through and golden on top.
