Ingredients

Chicken and Vegetables

  • 2 Tablespoons Olive Oil
  • 4 Boneless Skinless Chicken Breasts, cut into bite size pieces
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 Small Yellow Onion, diced
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 2 cloves Garlic, minced (or 1 teaspoon minced garlic)

Rice and Seasoning

  • 1 ½ cups Long Grain White Rice
  • 1 ½ Tablespoons Cajun Seasoning
  • 1 teaspoon Paprika
  • 1 Tablespoon Butter
  • 3 cups Chicken Broth

Garnish

  • Fresh Parsley, chopped

Instructions

  1. Heat oil: Warm the olive oil in a large deep skillet over medium-high heat to prepare for sautéing the chicken and vegetables.
  2. Cook chicken: Add the bite-sized chicken pieces to the skillet and season with salt and pepper. Sauté for 3-4 minutes, tossing occasionally to ensure even cooking and browning.
  3. Add vegetables: Stir in the diced onion, red bell pepper, green bell pepper, and minced garlic. Continue to sauté for 3-5 minutes until the vegetables soften and become fragrant.
  4. Combine rice and spices: Incorporate the long grain white rice, Cajun seasoning, paprika, and butter into the skillet mixture, stirring well to coat everything evenly.
  5. Add broth and simmer: Pour in the chicken broth and bring the mixture to a low simmer over medium heat.
  6. Cook covered: Cover the skillet and reduce the heat to low. Allow it to cook for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed.
