Instructions

  1. Prepare the Tin: Line a large slice tin (at least 25cm by 25cm) with baking paper or lightly grease it to prevent sticking and protect the tin from knife marks. Using a ceramic or glass dish is recommended for easier removal.
  2. Combine Ingredients: In a large microwave-safe bowl, combine the brown sugar, diced butter, and sweetened condensed milk evenly.
  3. Microwave Mixture: Microwave on 50% power for 10 minutes, stirring every 2-3 minutes to prevent burning and encourage even melting. Near the end, check the mixture on the back of a spoon; if sugar crystals remain, microwave for an additional minute or until mostly dissolved.
  4. Add White Chocolate: Remove from the microwave and immediately stir in the white chocolate pieces until fully melted and the mixture is smooth and creamy.
  5. Set the Fudge: Pour the mixture into the prepared slice tin, spreading evenly. Refrigerate for at least 3 hours or overnight to set firm.
