Carrot Cake Overnight Oats are a creamy and nutritious breakfast that combines the comforting flavors of carrot cake with the convenience of overnight oats. This recipe uses warm spices, grated carrot, and natural sweeteners to create a delightful and healthy start to your day, perfect for busy mornings or a wholesome snack.

Ingredients

Overnight Oats Base

  • 1 ⅓ cups old-fashioned oats
  • 1 ⅓ cups milk of choice
  • 2/3 cup vanilla Greek yogurt
  • 1/2 tbsp chia seeds
  • 1 tbsp honey
  • 1/2 tsp lemon extract
  • 1/2 tsp ground cinnamon
  • Pinch of sea salt

Add-ins

  • 1/3 cup grated carrot (about 1 large carrot)
  • 1 tbsp chopped walnuts
  • 1 tbsp chopped golden raisins

Instructions

  1. Combine Ingredients. Place all of the ingredients including oats, milk, yogurt, chia seeds, honey, lemon extract, cinnamon, sea salt, grated carrot, walnuts, and golden raisins into a large mixing bowl. Stir the mixture thoroughly until all ingredients are well combined and evenly distributed.
  2. Portion and Seal. Scoop the oat mixture into three weck jars or airtight containers. Seal the jars tightly to prevent air from entering. Alternatively, you can leave the mixture in the large bowl and cover it tightly with plastic wrap.
  3. Refrigerate Overnight. Place the jars or covered bowl into the refrigerator for at least 2 hours, preferably overnight, to allow the oats and chia seeds to absorb the liquid and soften, resulting in a creamy texture.
  4. Serve. When ready to eat, serve the oats chilled. For a thicker consistency, eat as is. For a thinner, smoother texture, add an additional 1/3 to 1/4 cup milk and stir before serving. Optionally, top with extra vanilla yogurt, chopped nuts, a dash of cinnamon, and a drizzle of honey for extra flavor and texture.

Notes

  • Best consumed within 3 days to enjoy optimal texture and freshness; beyond that, the oats may become too mushy.
  • You can customize the recipe by adding other nuts, seeds, or dried fruits according to your preference.
