This Charred Grapefruit & Mezcal Paloma Sour is a smoky, tart, and juicy cocktail that fuses the bright flavors of a classic paloma with the frothy texture and tang of a sour cocktail. Featuring charred grapefruit juice, smoky Mezcal Creyente Joven, simple syrup, and a touch of club soda, this drink offers a sophisticated, refreshing twist perfect for cocktail lovers seeking depth and vibrancy in their glass.

Ingredients

For the Charred Grapefruit Juice

  • 1 medium grapefruit

For the Cocktail

  • 1½ ounces Mezcal Creyente Joven
  • ½ ounce simple syrup
  • 1 ounce club soda
  • 1 small or medium egg white (optional)
  • 3 dashes Angostura bitters

Instructions

  1. Prepare the Grapefruit: Cut the grapefruit in half horizontally. Slice one half into ½-inch pieces and keep the other half intact for charring.
  2. Char the Grapefruit: Using a kitchen torch, carefully char both the intact grapefruit half and the sliced pieces until the skin and flesh develop a smoky blackened layer.
  3. Extract the Juice: Juice the charred grapefruit halves and slices into a small bowl, capturing all the smoky, tangy juice.
  4. Mix the Cocktail: Fill a cocktail shaker with ⅓ cup of ice. Add 1½ ounces Mezcal Creyente Joven, 2 ounces of the charred grapefruit juice, ½ ounce simple syrup, 1 ounce club soda, the egg white if using, and 3 dashes of Angostura bitters.
  5. Shake Vigorously: Secure the shaker with a tight lid and shake vigorously for about 15 seconds until the mixture is cold and the egg white forms a frothy foam.
  6. Strain and Serve: Strain the cocktail into a chilled cocktail glass.
  7. Garnish: Garnish the drink with charred grapefruit wedges for visual appeal and an extra burst of smoky citrus aroma.

Notes

  • Use a kitchen torch carefully to avoid burning yourself or your surroundings.
  • The egg white is optional but adds a creamy froth and smooth texture to the cocktail.
  • If you prefer a less smoky flavor, reduce the charring time or char only the grapefruit slices.
  • Adjust simple syrup quantity based on your sweetness preference.
  • For a stronger fizz, add an additional splash of club soda just before serving.
  • The cocktail can be served on the rocks if you prefer it chilled but less diluted.
