Ingredients

Cookies

  • 1 (13 oz) box Chips Ahoy chocolate chip cookies

Cheesecake Filling

  • 1 (8 oz) block cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 (8 oz) tub Cool Whip, thawed

Chocolate Coating

  • 1 1/4 cups semi-sweet chocolate chips
  • 1 tbsp vegetable oil

Instructions

  1. Prepare Cookie Base: Line a baking sheet with parchment paper or a silicone baking mat. Arrange half of the chocolate chip cookies flat side facing up on the sheet and set aside. This will serve as the base for the sandwich cookies.
  2. Make Cheesecake Filling: In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix these ingredients together until smooth and creamy. Gently fold in the thawed Cool Whip to create a light and fluffy cheesecake filling.
  3. Assemble Sandwiches: Spoon one heaping tablespoon of the cheesecake filling onto each cookie on the baking sheet. Then, top each with another chocolate chip cookie to form sandwiches, pressing gently to secure.
  4. Melt Chocolate: Place the semi-sweet chocolate chips and vegetable oil into a microwave-safe bowl. Microwave in 30-second intervals, stirring between each session, until the chocolate is fully melted and smooth.
  5. Dip Sandwiches: Dip each cookie sandwich halfway into the melted chocolate, coating one side. Return the dipped sandwiches to the prepared baking sheet.
  6. Set and Store: Place the baking sheet in the freezer to allow the chocolate to set firmly. Once set, transfer the cheesecake cookie sandwiches to the refrigerator or freezer for storage until ready to enjoy.
