These Chili Lime Grilled Shrimp Skewers are a flavorful and zesty dish perfect for summer grilling. Marinated in a tangy blend of avocado oil, lime juice, chili powder, garlic, and a natural sweetener, the shrimp are grilled to perfection with a delicious char. Finished with a homemade glaze and fresh herbs, these skewers are quick to prepare and sure to be a hit at any BBQ or weeknight dinner.

Ingredients

Marinade

  • 1/3 cup avocado oil
  • 1/3 cup lime juice
  • 2 Tbsp chili powder
  • 2 cloves garlic, minced
  • 2 Tbsp Truvia® Natural Sweetener
  • 1/2 tsp sea salt

Shrimp

  • 1 to 2 lbs raw shrimp (peeled and deveined)

Garnish

  • 2 to 4 Tbsp red onion, chopped
  • 1 to 2 Tbsp fresh parsley or cilantro, chopped

Instructions

  1. Prepare the marinade: In a small bowl or measuring cup, whisk together the avocado oil, lime juice, chili powder, minced garlic, Truvia® Natural Sweetener, and sea salt until well combined.
  2. Marinate the shrimp: Place the raw shrimp in a sealable container or zip-lock bag and pour in half of the marinade mixture. Seal the bag/container and move it around to thoroughly coat all the shrimp. Refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
  3. Preheat the grill: When ready to cook, preheat the grill to high heat (450 to 500°F). Brush the grill grates with oil to prevent sticking.
  4. Prepare the skewers: Thread the marinated shrimp onto metal skewers. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  5. Grill the shrimp: Place the skewers directly on the hot grill and close the lid. Cook for 2 minutes until the shrimp start to char and turn pink.
  6. Flip and finish cooking: Using heat-safe tongs, flip the skewers over and close the lid again. Cook for an additional 1 to 3 minutes until the shrimp are fully cooked with a charred exterior. Remove from the grill and place on a serving plate.
  7. Make the glaze: Pour the remaining half of the marinade into a small skillet and heat over medium-high heat. Bring it to a full boil and cook, stirring occasionally, until the marinade thickens to a glaze consistency, about 5 to 8 minutes.
  8. Glaze and garnish: Drizzle or brush the thickened marinade over the grilled shrimp skewers. Sprinkle with chopped red onion and fresh parsley or cilantro for a fresh finish. Serve immediately with your favorite side dishes.

Notes

  • For best results, marinate the shrimp for at least 1 hour but no more than 8 hours to avoid the acid from the lime juice ‘cooking’ the shrimp.
  • If using wooden skewers, soaking them prevents burning on the grill.
  • You can substitute fresh cilantro for parsley based on your preference.
  • Adjust chili powder amount depending on your preferred spice level.
  • Serve with rice, grilled vegetables, or a fresh salad for a complete meal.
  • If metal skewers are unavailable, bamboo skewers soaked in water work well.
