Ingredients

Cheesecake Filling

  • 8 ounces cream cheese, at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips

  • 12 large fresh strawberries

  • ¼ cup mini chocolate chips

Instructions

  1. Prepare Cheesecake Mixture: In a large bowl, use a hand mixer to combine the cream cheese and powdered sugar until well-combined. Beat in the vanilla extract to infuse the mixture with flavor.
  2. Melt Chocolate: In a small microwave-safe bowl, heat the dark chocolate chips in 30-second intervals, stirring between each, until fully melted. Allow the chocolate to cool slightly before adding it to the cream cheese mixture.
  3. Combine Mixtures: Add the melted chocolate into the cream cheese mixture and beat first on low speed until just combined, then increase to high speed until the filling is smooth and creamy. Cover the bowl and refrigerate for at least 30 minutes to let the filling set.
  4. Prepare Strawberries: While the filling chills, wash and dry the strawberries thoroughly. Slice each strawberry in half lengthwise through the stem, keeping the stem intact. Carefully hollow out the center of each strawberry half using a small spoon or strawberry huller, avoiding puncturing through to the base.
  5. Fill Strawberries: Transfer the chilled cheesecake filling into a piping bag fitted with a decorating tip, or use a resealable plastic bag with a small corner snipped off. Pipe the filling generously into each hollowed strawberry half.
