Delight in these decadent Chocolate Covered Almond Butter Stuffed Dates, a luscious blend of creamy almond butter, crunchy pecans, and rich melted chocolate. Perfect as a wholesome snack or an elegant dessert, these naturally sweetened treats combine the chewiness of medjool dates with the smoothness of almond butter and the crunch of nuts, all enveloped in silky dark chocolate and finished with a sprinkle of flaky sea salt.

Ingredients

Dates Filling

  • 16 medjool dates (pitted)
  • to ½ cup unsweetened creamy almond butter
  • ½ cup raw pecans (chopped)

Chocolate Coating

  • ½ cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt for garnish

Instructions

  1. Prepare Dates: Use a paring knife to slice each date open lengthwise and remove the pits if they aren’t already pitted. Even if pitted, slice open to create a cavity for filling. Place the prepared dates on a small baking sheet, plate, or platter.
  2. Stuff Dates: Using a butter knife or small spoon, fill each date with 1 to 2 teaspoons of almond butter, adjusting the amount based on the size of the dates and personal preference.
  3. Add Pecans: Press chopped pecans onto the almond butter atop each date. Alternatively, you can put chopped nuts inside the date cavity before adding almond butter.
  4. Melt Chocolate: Combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second bursts, stirring well after each, until fully melted and smooth, approximately 60 seconds total.
  5. Coat Dates: Drizzle the melted chocolate over the stuffed dates. You may fully coat them or apply a light drizzle, depending on your preference.
  6. Garnish: While the chocolate is still melted, sprinkle flaky sea salt over the dates to enhance the flavor.
  7. Chill: Place the chocolate-covered dates in the refrigerator for 30 minutes to 1 hour, or until the chocolate hardens completely.

Notes

  • Medjool dates are preferred for their large size and natural sweetness.
  • Use unsweetened almond butter to control sweetness and keep the recipe healthier.
  • You can substitute pecans with other nuts like walnuts or almonds for variation.
  • For vegan or dairy-free, ensure chocolate chips are vegan-friendly.
  • Store finished dates in an airtight container in the refrigerator for up to one week.
  • Adjust the amount of almond butter and nuts depending on preference and date size.
  • Flaky sea salt enhances the chocolate and almond butter flavors but can be omitted if preferred.
