Instructions

  1. Prepare blueberries: Wash and dry the blueberries thoroughly. Ensure they are completely dry by rolling them between tea towels and then placing them on a clean, dry surface to avoid any moisture that might interfere with the chocolate coating.
  2. Melt chocolate: Place the dark chocolate chips in a medium microwave-safe bowl. Microwave at 50% power for 1 minute, then add the coconut oil. Microwave again at half power for another minute. Stir the mixture well then continue to melt the chocolate by microwaving in 30-45 second intervals at half power, stirring each time, until fully smooth and melted.
  3. Assemble: Using a mini muffin pan, place about 4 blueberries into each muffin cup. Pour approximately ½ tablespoon of the melted chocolate over the blueberries in each cup. After filling all cups, garnish each with your choice of flaked sea salt, crushed freeze-dried blueberries, orange zest, or crushed pistachios to add a flavorful finishing touch.
  4. Chill: Transfer the mini muffin pan to the refrigerator and allow the chocolate to set completely, which will take about 30 minutes.
