Delight in these fun and festive Chocolate Covered Strawberry Jello Shots, perfect for parties and gatherings. Fresh strawberries are hollowed out and filled with a boozy strawberry jello mixture, then dipped in smooth, semi-sweet chocolate for a deliciously sweet and spirited treat.

Ingredients

Strawberries and Jello Mixture

  • 3 (16 oz) containers large strawberries
  • 1 (3 oz) box strawberry jello
  • 1 cup water (boiling)
  • 1 cup vodka

Chocolate Coating

  • 2 cups semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Instructions

  1. Prepare the Strawberries: Wash and dry your strawberries thoroughly. Slice off the tops and bottoms so that each strawberry can stand upright on a flat surface.
  2. Hollow Out Strawberries: Using a melon baller, carefully scoop out the center of each strawberry without puncturing through the bottom, creating a cavity for the jello mixture.
  3. Make the Jello Mixture: In a medium saucepan, bring 1 cup of water to a boil. Place strawberry jello powder in a large mixing bowl and pour the boiling water over it. Add 1 cup of vodka and whisk briskly until the jello powder is fully dissolved.
  4. Fill the Strawberries: Transfer the jello mixture into a container with a spout or measuring cup, then pour it into the hollowed strawberries, filling each completely. Arrange the strawberries upright in the refrigerator.
  5. Chill the Jello Shots: Refrigerate the filled strawberries for at least 2 hours until the jello has fully set and is firm.
  6. Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and melted.
  7. Dip the Strawberries: Holding each strawberry by the top, dip the bottom half into the melted chocolate. Place the dipped strawberries on a baking sheet lined with parchment paper or a silicone mat to prevent sticking.
  8. Set the Chocolate Coating: Place the dipped strawberries in the refrigerator or freezer for about 30 minutes, allowing the chocolate to harden and set completely before serving.

Notes

  • Be careful not to puncture the bottom of the strawberries when hollowing them out to avoid leakage of the jello mixture.
  • You can substitute vodka with another flavored liquor if desired.
  • Use a silicone baking mat or parchment paper to prevent chocolate from sticking to surfaces.
  • For a firmer jello shot, you can reduce the water slightly or increase gelatin concentration.
  • Keep the jello shots refrigerated until just before serving to maintain firmness and chocolate crispness.
