  • 3 ripe avocados (peeled and diced)
  • 1 ½ cups cherry tomatoes (cut into 4ths)
  • ¾ cup red onion (finely chopped)
  • 6 ounces feta cheese
  • 2 cloves garlic (minced)
  • 2 Tbsp lime juice (to taste)
  • ½ tsp sea salt (to taste)
  • ½ cup fresh cilantro (chopped, optional)

Instructions

  1. Mash Avocados: Add the peeled and diced avocados to a large mixing bowl along with the sea salt and lime juice. Mash some of the avocado to create a partially creamy dip, leaving the pieces fairly chunky for a pleasing texture. Adjust the mashing to your desired consistency, whether more creamy or more chunky.
  2. Combine Ingredients: Add the chopped cherry tomatoes, finely chopped red onion, feta cheese, minced garlic, and chopped cilantro (if using) to the bowl. Mix all ingredients until well combined. Taste and adjust the seasoning by adding more salt, lime juice, garlic, onion, or cilantro as preferred.
  3. Garnish: Garnish the top of the dip with extra chopped cilantro, cherry tomatoes, or red onions for a colorful presentation.
  4. Serve: Use the dip as a spread, condiment, or dip. It pairs perfectly with corn tortilla chips, pita chips, crackers, sandwiches, burgers, or salads.
