Ingredients

Blondie Batter

  • 1 cup unsalted butter, melted
  • 1 1/2 cups light brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt

Cinnamon Filling

  • 3 tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar, firmly packed
  • 1 tablespoon cinnamon

Frosting

  • 1/4 cup unsalted butter, softened to room temperature
  • 8 ounces cream cheese, softened to room temperature
  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Line a 9-inch square baking dish with parchment paper and set it aside to prepare for the batter.
  2. Make Cinnamon Filling: In a small bowl, use a fork to blend the melted butter, brown sugar, and cinnamon until combined. Set this cinnamon filling aside for layering.
  3. Mix Blondie Batter Ingredients: In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Then add the eggs and vanilla extract, continuing to whisk until fully combined.
  4. Add Dry Ingredients: Using a wooden spoon or spatula, fold in the all-purpose flour, cinnamon, baking powder, and kosher salt. Mix gently by hand just until the batter comes together; avoid over-mixing.
  5. Layer the Batter and Filling: Pour approximately two-thirds of the blondie batter into the prepared baking dish and spread it evenly with an offset spatula. Evenly sprinkle the cinnamon filling mixture on top, using your hands to distribute it fully. Finally, spoon the remaining blondie batter over the filling and smooth the surface. Some filling may peek through, which is perfectly fine.
  6. Bake the Blondies: Bake in the preheated oven for 38 to 42 minutes or until the edges are golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Remove from the oven and allow to cool completely in the pan before frosting.
  7. Prepare Frosting: In a mixing bowl, beat the softened butter and cream cheese together for about 3 minutes until smooth and fluffy, scraping down the sides as needed. Add powdered sugar and vanilla extract, and continue to beat for an additional 3 minutes until creamy and spreadable.
  8. Frost and Serve: Spread the cream cheese frosting evenly over the cooled blondies. Cut into 16 squares and serve. Enjoy your delicious cinnamon roll blondies!

Notes

  • Ensure butter and cream cheese are softened for smooth frosting.
  • Do not overmix batter to keep blondies tender and chewy.
  • Use parchment paper lining for easy removal and cleanup.
  • Allow blondies to cool completely before frosting to prevent melting.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • For an extra touch, lightly drizzle additional cinnamon sugar on top before baking.
