Ingredients

Dry Ingredients

  • 10 cups Rice Krispies Cereal (310g)
  • 2 (10-ounce/283g) bags mini marshmallows, divided
  • ½ teaspoon salt

Wet Ingredients

  • ¾ cup butter (170g)
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare Baking Pan: Line a 13×9-inch baking pan with parchment paper or foil to prevent sticking and make removal easier.
  2. Melt Butter: In a large pot over medium heat, melt the butter completely, ensuring it doesn’t burn or brown.
  3. Set Aside Marshmallows: Reserve 2 cups of mini marshmallows from the total and set them aside for later use.
  4. Melt Remaining Marshmallows: Add the remaining marshmallows, vanilla extract, and salt to the melted butter. Stir continuously with a silicone spatula for about 5 minutes until fully melted and smooth. Remove the pot from heat once melted.
  5. Combine Cereal and Melted Marshmallow: Add the Rice Krispies cereal to the melted marshmallow mixture. Stir thoroughly until well combined; the mixture will be very sticky.
  6. Add Reserved Marshmallows: Fold in the reserved 2 cups of mini marshmallows gently so they’re evenly dispersed but not melted, creating little pockets of marshmallow texture in the treats.
  7. Press Mixture into Pan: Pour the sticky mixture into the prepared baking pan. Using a silicone spatula or the butter wrapper, press the mixture into an even layer, ensuring compactness for easy cutting later.
  8. Cool Completely: Allow the treats to cool and set for about 1 hour at room temperature.
  9. Cut and Serve: Use the parchment paper to lift the treats from the pan. Lightly grease a sharp knife with butter and cut into squares. Serve and enjoy!
