Gravy

  • 2 tablespoons extra-virgin olive oil
  • ½ medium yellow onion, thinly sliced
  • 8 ounces cremini mushrooms, thinly sliced
  • 3 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon mustard powder
  • ¾ teaspoon sea salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Better Than Bouillon beef base, or 1 beef bouillon cube

  • Minced fresh parsley leaves (optional)

Instructions

  1. Mix the spices: Prepare the spice blend by combining sea salt, Italian seasoning, garlic powder, onion powder, mustard powder, Worcestershire sauce, and freshly cracked black pepper to season the meat mixture adequately.
  2. Make the steaks: In a medium bowl, whisk together the eggs, milk, ketchup, pre-mixed spices, and black pepper to create a binding mixture that will give flavor and moisture to the patties.
  3. Make the patties: In a large bowl, gently combine the ground beef and breadcrumbs with your hands. Add the egg mixture and mix well without overworking the meat. Form the mixture into six oval-shaped patties about 1 inch thick.
  4. Brown the patties: Heat 1 tablespoon extra-virgin olive oil in a large skillet over medium heat. Once hot and shimmering, add the beef patties. Cook undisturbed for about 4 minutes per side until browned but not fully cooked through. Remove patties to a plate.

  6. Thicken the gravy: Add the butter to the skillet and melt it. Stir in the flour, mustard powder, sea salt, garlic powder, and onion powder to create a roux. Slowly pour in the beef broth, Worcestershire sauce, and beef base or bouillon cube while stirring continuously to avoid lumps.
  7. Simmer the patties: Increase heat to medium-high and bring the gravy to a boil. Carefully nestle the browned patties back into the skillet. Cover and reduce heat to low. Simmer gently for 10 to 15 minutes, or until the internal temperature of the patties reaches 160°F (71°C), ensuring they are fully cooked and tender.
  8. Serve: Divide the Salisbury steaks among plates and spoon the rich mushroom onion gravy over them. Garnish with minced fresh parsley if desired and serve hot.
