These Coconut Pecan Cookie Bars are a delightful treat combining the rich flavors of buttery pecans and sweet coconut flakes in a soft, chewy cookie bar form. Ingredients

Dry Ingredients

  • 1 ½ cups flour (210g)
  • ½ teaspoon salt
  • ½ teaspoon baking soda

Wet Ingredients

  • ½ cup butter (softened)
  • ½ cup brown sugar (110g)
  • 1/3 cup sugar (70g)
  • 1 tablespoon vanilla extract
  • 1 egg

Mix-Ins

  • 1 cup pecans (chopped, 115g)
  • 1 cup unsweetened coconut flakes (80g)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the cookie bars.
  2. Cream Butter and Sugars: In a mixing bowl, use an electric hand mixer or stand mixer to cream together the softened butter, brown sugar, and sugar for 2 to 3 minutes until the mixture is light and fluffy, ensuring a smooth base for the dough.
  3. Add Vanilla and Egg: Mix in the vanilla extract and the egg thoroughly to combine all wet ingredients.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, and baking soda to evenly distribute the leavening agents and seasoning.
  5. Mix Dry into Wet: Carefully add the dry ingredients to the sugar mixture and stir gently, mixing only until most of the flour is incorporated to avoid overworking the dough which could make the bars tough.
  6. Add Half of Pecans and Coconut: Fold in half of the chopped pecans and coconut flakes into the dough, reserving the rest for topping.
  7. Press Dough Into Pan: Line a ¼ sheet pan or a 9×13 inch baking dish with parchment paper. Press the cookie dough evenly into the pan to form a uniform layer.
  8. Add Remaining Toppings: Evenly sprinkle the remaining pecans and coconut flakes on top of the dough and gently press them into the surface to adhere during baking.
  9. Bake: Place the pan in the preheated oven and bake for 16 to 18 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
