Ingredients

  • 5 medium-large tomatoes, chopped
  • 1/2 onion, chopped

  • 2 small cucumbers, chopped

Instructions

  1. Sauté Vegetables: Add the extra virgin olive oil to a large pot and heat over medium-high heat. Add the chopped tomatoes, onion, garlic, beet, and carrot. Stir to combine and bring the mixture to a simmer.
  2. Simmer to Soften: Reduce heat to medium and cook the vegetables for 30-45 minutes, stirring occasionally. This helps break down the vegetables, intensifying flavor and softening their texture for blending.
  3. Season the Base: Season the vegetable mixture with salt, pepper, Tabasco sauce, and Worcestershire sauce to taste. Adjust the seasoning as needed for your preferred flavor profile.
  4. Blend Vegetables: Remove the pot from heat and transfer the cooked mixture to a blender. Add the fresh parsley and chopped cucumbers. Pulse 2-3 times to break up the remaining chunks. The mixture will be thick and chunky at this stage.
  5. Strain the Juice: Pour the blended mixture through a food mill fitted with the smallest holed plate. This step removes seeds and fibrous bits to achieve a smooth texture.
  6. Final Blending: Return the strained juice to the blender and blend on high for about 1 minute until the juice achieves a smooth, pourable consistency. If desired, add up to 1 cup of filtered water to dilute the juice to your preferred thickness.
  7. Chill and Serve: Refrigerate the juice until chilled. Serve cold, garnished with parsley, lemon, or cucumber slices if you like.
