Instructions

  1. Sauté Vegetables and Mushrooms: In a large pot over medium-high heat, melt the butter. Add the sliced mushrooms, chopped onion, minced garlic, and fresh thyme. Cook, stirring occasionally, until the mushrooms become tender and start to brown, about 8 minutes.
  2. Deglaze with Wine: Pour in the dry white wine and let it simmer for 3 minutes to reduce slightly and enhance flavors.
  3. Add Flour and Cook: Sprinkle the all-purpose flour evenly over the mushroom mixture. Stir constantly for 2 minutes to cook out the raw flour taste and form a roux.
  4. Incorporate Broth and Seasonings: Slowly stir in the chicken broth, salt, and black pepper. Add the broth gradually to avoid lumps and ensure a smooth texture. Bring the mixture to a boil.
  5. Simmer to Thicken: Reduce heat to medium-low, cover the pot, and let the soup simmer gently for about 15 minutes, stirring occasionally, until it thickens to a luscious consistency.
