Ingredients

Main Soup:

  • 3 tablespoons butter
  • 1 onion, chopped
  • 4 large carrots, chopped
  • 1 clove garlic, chopped
  • 4 cups water
  • 4 tablespoons chicken bouillon powder
  • 1 pound fresh broccoli florets
  • 2 cups half-and-half

Thickening Mixture:

  • 3 tablespoons all-purpose flour
  • ¼ cup ice water

Seasoning:

  • 1 tablespoon soy sauce
  • ½ teaspoon ground black pepper
  • ¼ cup chopped parsley

Instructions

  1. Sauté Aromatics: In a saucepan, melt butter over medium heat. Add onions, carrots, and garlic. Sauté until softened, about 5 minutes.
  2. Prepare Broth: In a separate pot, bring water and chicken bouillon powder to a boil. Add the sautéed vegetables and most of the broccoli. Simmer, covered, for 15-20 minutes until broccoli is tender.
  3. Puree Soup: Blend the soup in batches until smooth. Return to the pot and add remaining broccoli.
  4. Thicken: Mix flour with ice water to create a slurry. Stir into the soup and simmer until thickened.
  5. Season and Serve: Add soy sauce, pepper, and parsley. Stir well and garnish with additional parsley. Serve hot or chilled.
