Ingredients

Main Ingredients

  • Nonstick cooking spray
  • 4 cups homemade refried beans or a 31-ounce can of refried beans
  • 1 cup sour cream
  • 1 cup shredded Mexican blend cheese, divided
  • 1 (4-ounce) can diced green chiles
  • 1½ teaspoons chili powder
  • ½ teaspoon fine salt
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon paprika

Optional Toppings

  • Sliced jalapeno
  • Sliced green onions
  • Chopped fresh cilantro
  • Lime wedges
  • Halved cherry or grape tomatoes
  • Crumbled cotija cheese
  • Diced or sliced avocado

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly mist the bottom and halfway up the sides of a 9×9-inch baking dish (or any 2½-quart baking dish) with nonstick cooking spray to prevent sticking.
  2. Mix the Bean Dip: In a large bowl, combine the refried beans, sour cream, half (½ cup) of the shredded Mexican blend cheese, diced green chiles, chili powder, salt, ground cumin, garlic powder, and dried oregano. Mix thoroughly until all ingredients are well incorporated.
  3. Assemble in Baking Dish: Using a spatula, spread the bean mixture evenly in the prepared baking dish, smoothing the surface. Then sprinkle the remaining ½ cup of shredded cheese evenly over the top.
  4. Bake Until Bubbly: Place the dish in the preheated oven and bake for about 20 minutes, or until the dip is bubbly throughout, and the cheese on top is melted and has a lightly browned, golden color.
  5. Serve: Remove from the oven and serve warm with tortilla chips, fresh vegetables, or your choice of dippers. Add optional toppings like sliced jalapeno, green onions, cilantro, tomatoes, cotija cheese, or avocado to enhance flavor and presentation.
  6. Store Leftovers: Place any leftovers in an airtight container and store in the refrigerator for up to 5 days. Reheat before serving.

Notes

  • You can use homemade or canned refried beans depending on your preference and convenience.
  • If you prefer a spicier dip, increase the amount of diced green chiles or add some chopped jalapeno directly into the mix.
  • The sour cream adds creaminess; for a lighter version, substitute with plain Greek yogurt.
  • Feel free to experiment with different cheese blends for varied flavor profiles.
  • This dip pairs wonderfully with tortilla chips, crisp vegetables, or even spread on warm tortillas as a snack.
