Ingredients

Pasta and Boiling

  • 1 cup penne pasta
  • 4 cups water
  • Salt to taste
  • Few drops oil

Chicken Marinade

  • 100 grams chicken breast, cubed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper powder
  • 1/2 teaspoon red chilli powder
  • Salt to taste

Sauce and Cooking

  • 1 1/2 tablespoon oil
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoon spring onion stem, chopped
  • 3 tablespoon pasta sauce (thick)
  • 1 teaspoon paprika
  • 1 teaspoon mixed herbs
  • 1/2 cup water
  • 2 tablespoon fresh cream
  • Salt to taste
  • 2 tablespoon spring onion, chopped (for garnish)

Instructions

  1. Marinate the chicken: Take 100 grams of cubed chicken breast in a bowl. Add 1 teaspoon garlic powder, 1/2 teaspoon pepper powder, 1/2 teaspoon red chilli powder, and salt to taste. Mix well and set aside to let the flavors infuse.
  2. Boil the pasta: In a saucepan, bring 4 cups of water to a boil. Add salt to taste and few drops of oil. Then add 1 cup penne pasta. Stir well and cook over medium flame until the pasta is fork-tender.
  3. Drain and cool pasta: Once cooked, transfer the pasta to a strainer and rinse under cold water to stop further cooking. Set aside.
  4. Sauté garlic and spring onions: Heat 1 1/2 tablespoon oil in a pan. Add 1 tablespoon finely chopped garlic and sauté until golden brown. Next, add 2 tablespoons chopped spring onion stems and sauté for one minute to release their flavor.
  5. Cook the chicken: Add the marinated chicken to the pan and sauté for 3-5 minutes until the chicken turns soft and is fully cooked.
  6. Add sauce and spices: Stir in 3 tablespoons of thick pasta sauce along with 1/2 cup water. Mix well, then add 1 teaspoon paprika and 1 teaspoon mixed herbs. Adjust water to get your desired sauce thickness and simmer for one minute.
  7. Incorporate cream and season: Add 2 tablespoons fresh cream and salt to taste. Mix thoroughly to combine all flavors.
  8. Toss pasta into sauce: Add the cooked and cooled penne pasta into the pan. Toss gently to coat the pasta evenly with the sauce.
  9. Garnish and finish: Finally, add 2 tablespoons chopped spring onions, give a quick mix, and switch off the heat.
  10. Serve hot: Plate the chicken pasta while warm and enjoy a comforting, flavorful meal.
