Instructions

  1. Combine cocoa, sugar, salt, and boiling water: In a saucepan over medium-low heat, mix together the unsweetened cocoa powder, granulated sugar, and a dash of salt. Pour in the boiling water.
  2. Bring mixture to a boil: Stir continuously until the mixture comes to a slow boil. Once boiling, reduce the heat to a simmer and continue stirring for 2 minutes to meld the flavors.
  3. Add milk and heat: Stir in 3 ½ cups of the milk and heat the mixture until it is very hot but not boiling. Keep stirring to prevent scorching.
  4. Finish with vanilla and serve: Remove the saucepan from heat and stir in the vanilla extract. Pour the hot cocoa evenly into 4 mugs.
  5. Optional serving suggestion: Add a splash of the remaining milk to each mug to bring the temperature down to a comfortable drinking level. Top with whipped cream if desired.
  6. Store leftovers: Cover and refrigerate leftovers for up to 4 days. Reheat gently on the stove over low heat, stirring frequently to prevent burning.

Notes
