These Creamy Peach Popsicles are a refreshing and naturally sweet frozen treat made with ripe peaches, full-fat coconut milk, pure maple syrup, and a hint of lemon juice. Perfect for a hot day, they offer a creamy texture and vibrant peach flavor without any artificial ingredients.

  • 3 medium-sized peaches (1.3 lbs, peeled and chopped)
  • 1 15-oz can full-fat coconut milk
  • ¼ cup pure maple syrup
  • 1 Tbsp fresh lemon juice
  • ½ tsp sea salt

Instructions

  1. Prepare the peaches: Peel the peaches, remove and discard the pits, then chop the fruit into chunks.
  2. Blend the ingredients: Place the chopped peaches, coconut milk, maple syrup, lemon juice, and sea salt in a high-powered blender or food processor. Blend until completely smooth.
  3. Adjust flavor: Taste the mixture and add more maple syrup or lemon juice if desired to suit your personal preference.
  4. Fill molds and freeze: Pour the mixture into popsicle molds, filling them most of the way. Secure the lids, insert the sticks, and freeze for 2 to 4 hours until fully set, depending on the mold size and temperature.
  5. Remove and serve: When ready, thaw the popsicles at room temperature for a few minutes or run warm water over the outside of the molds to help release them.
  6. Storage: Keep leftover popsicles in the molds or transfer them to an airtight container or zip lock bag. They can be stored for up to 3 months, and individually wrapping them will extend their shelf life.

  • Use ripe, sweet peaches for the best flavor and natural sweetness.
  • You can substitute the coconut milk with another creamy non-dairy milk if desired.
