Ingredients

Roasted Garlic

  • 1 bulb garlic
  • 2 Tbsp extra virgin olive oil (for roasting)

Hummus Base

  • 1 15-oz can garbanzo beans
  • ½ tsp baking soda
  • ½ cup tahini
  • 3 Tbsp cold water
  • 3 to 4 Tbsp lemon juice
  • ½ tsp sea salt
  • 2 Tbsp extra virgin olive oil (for hummus blending)

Instructions

  1. Roast the garlic: Preheat your oven to 400°F. Cut the top off a bulb of garlic to expose the cloves, drizzle liberally with olive oil, then wrap it completely in aluminum foil. Roast in the oven for 40 to 50 minutes until the cloves turn golden brown and caramelized.
  2. Cool and squeeze garlic: Remove the garlic from the oven and let it cool enough to handle. Gently squeeze the bulb to release the roasted cloves. Use 3 to 6 cloves in the hummus depending on your preference for garlic intensity.
  3. Prepare the garbanzo beans: Drain the canned chickpeas into a colander, transfer to a large saucepan, and cover with water. Add ½ teaspoon baking soda and bring to a rolling boil over high heat on the stovetop. Boil for 20 to 30 minutes to soften the beans further.
  4. Cool and peel chickpeas: Drain the boiled chickpeas and allow to cool. Optionally, peel off the skins from each chickpea for a smoother hummus texture.
  5. Combine ingredients in a food processor: Transfer the drained chickpeas to a food processor along with tahini, cold water, lemon juice, sea salt, olive oil, and the roasted garlic cloves.
  6. Blend until smooth: Process the mixture until very smooth, stopping to scrape down the sides once or twice using a rubber spatula to ensure even blending.
  7. Adjust seasonings: Taste your hummus and add additional sea salt, lemon juice, or roasted garlic as desired to perfect the flavor.
  8. Serve and garnish: Transfer the hummus to a serving dish. Garnish with optional toppings like pistachios, pine nuts, a drizzle of olive oil, paprika, sumac, sesame seeds, or fresh chopped parsley.
