Ingredients

Fruits, Herbs & Nuts

  • 350 grams or 2 to cups apple – chopped in small cubes
  • 65 to 70 grams or ¾ cup celery – finely chopped
  • 50 grams or 16 to 17 walnuts – chopped (without shells)
  • 270 grams or 1½ cups grapes – halved, seedless

Dressing

  • ½ cup mayonnaise – egg free or plant based
  • 2 teaspoons lemon juice or add as needed
  • to ¼ teaspoon salt or add as required
  • ½ teaspoon sugar or add as required
  • ¼ teaspoon ground black pepper or add as required

Serving

  • Few iceberg lettuce leaves

Instructions

  1. Prepare the Fruits: Rinse the apples thoroughly, peel and core them, then chop into small, even cubes. Rinse the grapes and slice each one in half. Finely chop the celery and roughly chop the shelled walnuts to ensure a good mix of textures.
  2. Make the Dressing: In a bowl, whisk together the plant-based mayonnaise, lemon juice, salt, sugar, and ground black pepper until the mixture is smooth and creamy, balancing the tartness and sweetness as desired.
  3. Combine Ingredients: Add the prepared apples, halved grapes, chopped celery, and walnuts to the dressing bowl. Toss gently but thoroughly to ensure every piece is evenly coated with the creamy dressing.
  4. Serve or Chill: For best taste, serve the salad immediately on a bed of fresh iceberg lettuce leaves, or cover and chill it to let the flavors meld together. Optionally, garnish with chopped parsley to add a fresh herbal note.
