  • 1/2 lemon, zest only
  • 1 tbsp capers
  • 4 cups pasta (about 12 oz)
  • 1 tbsp grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. Cook the Pasta: Cook the pasta according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta water, which will be used to adjust the sauce consistency.
  2. Sauté Aromatics: While the pasta cooks, heat a large frying pan over medium heat. Add the butter and let it melt fully. Add the minced garlic and cook for about 1 minute until fragrant. Then add the finely chopped onion and sauté for 2-3 minutes until it softens.
  3. Add Flavorings and Salmon: Stir in the lemon zest, capers, and smoked salmon pieces. Cook for an additional 2-3 minutes to allow flavors to meld, but avoid overcooking the salmon.
  4. Combine Pasta and Sauce: Season the salmon mixture with salt and pepper. Add the drained pasta directly to the pan and toss to combine. Pour in the crème fraîche and add reserved pasta water as needed to reach the desired sauce consistency. Toss everything together and cook for 1-2 minutes more to warm through, then remove from heat.
  5. Serve: Plate the pasta, then sprinkle with freshly chopped chives and grated Parmesan cheese. Serve immediately for best flavor and texture.
