Ingredients

Egg Mixture

  • 4 eggs
  • ½ cup milk (125ml)

Vegetables and Protein

  • 2 large courgettes, grated (350g)
  • 2 spring onions, finely sliced
  • 50g ham, diced

Dry Ingredients

  • 100g cheese, grated
  • ¾ cup flour (120g)
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat Oven: Preheat the oven to 180°C fan bake to prepare for cooking the quiche evenly.
  2. Mix Eggs and Milk: In a large bowl, whisk the 4 eggs thoroughly, then mix in ½ cup (125ml) of milk until well combined.
  3. Add Remaining Ingredients: Incorporate the grated courgettes, grated cheese, finely sliced spring onions, diced ham, flour, baking powder, salt, and pepper into the egg and milk mixture. Stir everything together until fully combined.
  4. Prepare the Dish: Grease or line a quiche dish or baking tray, then pour in the mixture and spread it evenly across the surface.
  5. Bake the Quiche: Place the dish in the preheated oven and bake for 40 minutes until the quiche is golden on top and cooked through.
  6. Cool and Serve: Allow the quiche to rest in the dish for around 10 minutes before serving. Enjoy warm as a main meal with a side salad or greens, or serve cold at a picnic or as a lunch box option.
