Dandy-Do Cookies are a delightful no-bake treat featuring crunchy Ritz crackers topped with a rich, creamy peanut caramel mixture. Perfect for quick preparation and serving a large group, these cookies combine the buttery sweetness of caramel with the savory crunch of peanuts for an irresistible snack or dessert.

Ingredients

Base

  • 2 sleeves Ritz crackers

Caramel Topping

  • 1 (14 oz) can sweetened condensed milk
  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup peanuts, chopped

Instructions

  1. Prepare the caramel mixture: In a saucepan over medium heat, combine the sweetened condensed milk, butter, brown sugar, and milk. Cook for 7-8 minutes, stirring continuously to ensure the mixture does not burn and becomes smooth and thick.
  2. Add vanilla and peanuts: Reduce the heat to low, stir in the vanilla extract and chopped peanuts, and cook for another 2 minutes until the mixture thickens further.
  3. Assemble the cookies: Spoon the peanut caramel topping onto each Ritz cracker evenly. Allow the cookies to cool completely before storing or serving, letting the topping set and become firm.

Notes

  • Stir the caramel mixture constantly to prevent it from sticking and burning.
  • You can substitute peanuts with other nuts or omit them for a nut-free option.
  • Store the cookies in an airtight container at room temperature for up to 3 days.
  • For firmer cookies, refrigerate after assembly to help topping set more quickly.
