Ingredients

Dubai Chocolate Chia Pudding

  • 1/4 cup chia seeds
  • 1 cup pistachio milk
  • 2 tbsp zero-calorie sweetener or sugar
  • 1/4 tsp ground cardamom
  • 2 tbsp toasted kataifi

Toasted Kataifi

  • 2 tsp butter
  • 1/4 cup kataifi dough

Kataifi Pistachio Bites

  • 2 tbsp pistachio butter
  • 1 tbsp toasted kataifi (from above)

Chocolate Layer

  • 1/3 cup dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Prepare the chia pudding: In a glass bowl, stir together chia seeds, pistachio milk, ground cardamom, sweetener or sugar, and toasted kataifi. Cover the bowl with a lid and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
  2. Quick method (optional): If short on time, combine chia seeds, pistachio milk, cardamom, and sweetener in a blender and blend for 10 to 20 seconds. Then gently fold in toasted kataifi with a spatula without further blending.
  3. Toast the kataifi: Heat butter in a medium skillet over medium heat. Add kataifi dough and cook, stirring frequently with a spatula, until golden brown and crispy to avoid burning. Remove from heat and let cool.
  4. Make kataifi pistachio bites: Mix pistachio butter with toasted kataifi. Adjust amounts so the mixture holds together when formed into small bites or balls. These can be stored in an airtight container until assembly.
  5. Coat bites with chocolate: Melt chocolate and coconut oil together in a microwave-safe bowl, heating in 30-second intervals until smooth, about 30-50 seconds. Toss some kataifi pistachio bites in the melted chocolate to coat.
  6. Assemble the pudding: Divide chilled chia pudding evenly between two serving dishes. Spoon or drizzle melted chocolate over the pudding surface. Garnish with both chocolate-coated and plain kataifi pistachio bites on top.
  7. Optional chilling: Refrigerate the assembled pudding for about 15 minutes to let the chocolate layer firm slightly before serving.
