A comforting and flavorful Dumpling Noodle Soup combining savory broth, tender dumplings, crisp bok choy, and pre-cooked egg noodles for a quick and satisfying meal.

Ingredients

Broth Ingredients

  • 3 garlic cloves, crushed
  • 1 inch piece fresh ginger, grated
  • 2 chicken stock cubes
  • 2 tsp sesame oil
  • 2 tsp sugar
  • 3 Tbsp soy sauce
  • 2 litres boiling water

Soup Ingredients

  • 16 frozen pre-made dumplings (flavour of your choice)
  • 2 bunches bok choy
  • 1 red chilli, sliced
  • 2 spring onions, sliced
  • 400g pre-cooked egg noodles
  • Fresh coriander (optional)

Instructions

  1. Prepare the broth: Add the crushed garlic, grated ginger, chicken stock cubes, sesame oil, sugar, soy sauce, and boiling water to a large pot. Bring the mixture to a boil to develop a rich broth base.
  2. Cook the dumplings: Carefully add the frozen dumplings to the boiling broth and simmer gently for 5 minutes until they are cooked through.
  3. Prep the vegetables: While the dumplings cook, cut the bok choy in half and rinse thoroughly under cold water. Slice the red chilli and spring onions for garnish and flavor enhancement.
  4. Add bok choy and noodles: After the dumplings have simmered for 5 minutes, add the bok choy and pre-cooked egg noodles to the pot. Cook together for another 2 minutes until the bok choy wilts and noodles are heated through.
  5. Serve the soup: Using tongs, transfer the dumplings into serving bowls, then add the noodles and bok choy. Ladle the hot broth over the ingredients to complete the soup.
  6. Garnish and enjoy: Top each bowl with fresh slices of red chilli, spring onions, and optional fresh coriander. Serve immediately while hot for the best flavors and textures.

Notes

  • The soup can be customized with any flavor of frozen dumplings you prefer, such as pork, chicken, or vegetable.
  • If you want a spicier soup, add more sliced red chilli or a dash of chili oil.
  • For a vegetarian option, use vegetable stock cubes and vegetable dumplings.
  • Pre-cooked egg noodles speed up the recipe, but you can use fresh noodles as well; just adjust cooking time accordingly.
  • Adding fresh coriander is optional but adds a fragrant finishing touch.
