These Easiest Ever Raspberry Jam Bars combine a buttery oat base with a sweet raspberry jam filling, topped with a crumbly oat layer. Perfect for a quick, no-fuss dessert or snack, these bars offer a delightful balance of soft jam and crisp oat topping, baked to a golden finish.

Ingredients

Base and Topping

  • 125g / 1 stick unsalted butter, melted
  • 1/2 cup brown sugar, tightly packed
  • 1 large egg (55-60g / 2 oz)
  • 1 1/2 cups plain/all-purpose flour
  • 1 1/2 cups rolled oats (traditional oats, not quick, instant or steel-cut)
  • 1/2 tsp baking powder
  • Pinch of salt

Filling

  • 1 cup raspberry jam (or other flavor)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 200°C/400°F (180°C fan). Grease a 20cm/8″ metal baking pan with butter and line it with parchment paper, leaving an overhang on the sides to easily lift the bars out after baking.
  2. Make the Oatmeal Cookie Base: Melt the butter in a microwave-safe bowl. Stir in the brown sugar until smooth and lump-free. Add the egg and mix well until fully incorporated. Then add the flour, rolled oats, baking powder, and salt, stirring until the flour is fully combined and the mixture is uniform.
  3. Form the Base Layer: Press 1 1/2 cups of the oat mixture into the prepared pan evenly using your hands to create the base.
  4. Add the Jam Layer: Spread the raspberry jam evenly over the base layer. If the jam is too thick, microwave it briefly to loosen for easier spreading.
  5. Top with Crumbled Oat Mixture: Use your fingers to crumble the remaining oat mixture over the jam layer. It may clump, so break it apart to ensure even coverage.
  6. Bake: Bake in the preheated oven for 30 to 35 minutes until the topping is a deep golden color.
  7. Cool and Serve: Remove from oven and allow the bars to cool fully in the pan for about 2 hours before lifting out with the parchment overhang. To speed up cooling, cool for 30 minutes at room temperature then place in the fridge for 30 minutes.
  8. Cut and Enjoy: Once cooled, cut into 16 squares and serve.

Notes

  • The crumbled topping may be slightly clumped—use your fingers to break it up evenly over the jam layer.
  • Optional addition: Fold 1/2 cup chopped nuts into the oat biscuit mixture for extra texture and flavor.
  • Store bars in an airtight container in the fridge for up to 5 days. Bring to room temperature before eating for best taste and texture.
