This Easy Almond Croissants Recipe transforms store-bought croissants into a decadent, bakery-style treat. Filled with a creamy almond butter mixture and topped with sliced almonds and powdered sugar, these warm, flaky pastries are perfect for breakfast or a delightful snack.

Ingredients

For the Almond Filling

  • 6 Tablespoons unsalted butter, softened to room temperature
  • ½ cup granulated sugar
  • 1 cup almond flour
  • 1 large egg
  • 1 teaspoon almond extract

For the Croissants

  • 6 large croissants
  • ¼ cup sliced almonds
  • 2 Tablespoons powdered sugar, for dusting the tops

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set it aside to prepare for baking the croissants.
  2. Make Almond Filling: In a mixing bowl, beat the softened butter with granulated sugar until light and fluffy, about 2 minutes. Add almond flour, egg, and almond extract and beat for an additional two minutes until the mixture is smooth and fully combined.
  3. Slice Croissants: Using a serrated knife, slice each croissant in half horizontally to prepare for filling.
  4. Fill Croissants: Spread about 2 tablespoons of the almond filling on the bottom half of each croissant. Place the top half back on and gently press down.
  5. Top and Decorate: Spread a thin layer of almond filling over the top of each croissant, then press sliced almonds over the filling so they stick.
  6. Bake: Arrange the croissants on the prepared baking sheet. Bake in the preheated oven for 13 to 16 minutes until the tops are golden brown.
  7. Finish and Serve: Cool the croissants for several minutes. Dust generously with powdered sugar before serving warm for the best flavor and texture.

Notes

  • Use fresh, high-quality almond flour for the best flavor and texture in the filling.
  • Make sure the butter is softened to room temperature to ensure smooth mixing of the almond filling.
  • Adjust baking time slightly based on your oven, checking for golden brown tops as the indicator of doneness.
  • Serve these almond croissants warm to enjoy the creamy filling at its best.
  • Leftovers can be stored in an airtight container and reheated in the oven to maintain crispness.
